Snack mix recipe

I forgot the snack mix recipe!

1 bottle Orville Redenbachers popcorn oil
2 packages of dry Ranch dip mix
6-7 boxes of snacks
I use:
Keebler Honey Wheat Snack Sticks
Triscuit thin crisps (trianglar in shape)
White cheddar cheez-it
Puffed Snack Bites
Macaroni and Cheese white cheddar snacks
Chex corn or rice cereal
Bugles

I pour each type of snack into a 1 gallon ziploc bag and pour some of the popcorn oil, ranch dressing mixture in and shake it up. Pour that mixture into a large baking pan. I use the foil roasters. Continue until all have been mixed. It will take 2 large roasters. Bake for 40 minutes at 275 degrees. Stir after 20 minutes. Remove and let cool. It fills a 2 gallon ziploc bag
In the bottom picture, you can see the catered foods. I have chocolate covered strawberries, pecan pie tarts in phyllo dough shells, almond poppy seed mini cupcakes with filling and topping, brownie bites topped with chocolate icing star or dollap of the icing you use on German Chocolate cake. There are also cranberry pinwheels, dill dip and vegetables. In the other picture, you can see the snack mix. I got the recipe from my friend Michelle. I call it Jon's Favorite Snack Mix because Blake's best friend Jon loves this stuff so much. I give him a bag of it whenever I make a new batch. This stuff freezes really well thank goodness because it makes a 2 gallon bag's worth.

Chocolate covered strawberries

1 bag semi -sweet chocolate chip morsels
cleaned and dried strawberries

melt chocolate chips in microwave for about 60 seconds. Stir until completely melted. If they are not melted, heat in microwave in 15 second intervals until completely melted.

Put tip of strawberry into melted chocolate about 3/4 of the way up the berry. Bring out of the chocolate and let drip if necessary. Lay strawberry onto waxed paper. Continue until tray is full. Put berries into frig for a few minutes to set chocolate. Remove berries from waxed paper and store until use.

See, that was so easy!

Almond Poppy Seed Mini cupcakes

I sort of just made up the recipe as I normally do but it was simple.

White cake mix
poppy seeds
almond extract

Mix white cake mix according to directions. Add 1 tsp of almond extract and approximately 1 1/2 tbsp of poppy seeds. Pour cake mixture into regular or small cupcake liners or pan after spraying to prevent sticking. Bake until toothpick comes out clean. Cool cupcakes.

To fill cupcakes, use the large end of a decorating tip to remove some of the cupcake center. This works on the mini size, not sure what you could use for large cupcakes though you could probably just force the cream in with a decorating bag and tip.

Icing

Recipe was found on www.allrecipes.com

1 8 oz package of cream cheese (I used whipped)
1/2 c white sugar
1 tsp vanilla extract
1/2 tsp almond extract
2 cups heavy cream

Combine the cream cheese, sugar, vanilla and almond extract in large mixing bowl. Beat on medium speed until smooth. If you use whipped cream cheese, this happens very quickly. While mixture is still whipping, slowly pour in the heavy cream. Stop and scrape the bottom of the bowl a couple of times while you continue whipping until the cream can hold a stiff peak.

This recipe is supposed to be able to be unrefrigerated for quite awhile so it makes for a nice dessert that can be put on a buffet table.

Put whipped cream frosting in decorating bag with larger star tip. Pipe some frosting into the hole you created or force the tip into the cupcake and squeeze until some frosting is in the middle. Swirl icing on top of cupcake in desired fashion.


Pecan Tarts

This recipe comes from Athens Foods website

1 egg
3 tbsp packed light brown sugar
2 tbsp corn syrup
1 tbsp melted butter
1/4 tsp vanilla extract
pinch of salt
3/4 cup finely chopped pecans (I didn't use this much while making 2 batches)
15 Athens Mini Fillo Shells (15 in a box)

In a small bowl, whip egg until light and fluffy about 1 minute. In a small bow, combine 2 tbsps of whipped egg with brown sugar, corn syrup, butter, vanilla extract and salt. Blend thoroughly. Put about 1 tbsp mixture into fillo cups. Top with chopped pecans. Bake in 350 degree oven for 10 minutes. Ready to serve immediately


Brownie Bites

I found the coolest silicone thing for brownies made by Wilton. It's a lot of work just for family but is nice for times you need bitesize desserts.

I baked the brownies in the 1"x1" squares for 15+ minutes
Cooled brownies.

I piped fudge icing on half and dolloped the topping for German Chocolate Frosting on the other half.

So simple but just right for parties.


Vegetable tray and dip

I like to cut vegetables up with special tools to make them more interesting. I start my display but putting foil down in the tray or container I want to use. I then line the tray with large leafed lettuce leaving a hole in the middle for my dip receptacle. Sometimes I use a hollowed out pepper if I don't need a large amount of dip. Today I used one my containers which have ice underneath the dip to keep it cold.

Cut up vegetables and lay in sections around the tray to make an attractive arrangement.
Place wet paper towel over vegetables until serving time to keep them more crisp.

Dill Dip

It's an oldy but goody.

1 cup mayo
1 cup sour cream
1 Tbsp dried dill weed
1 Tbsp dried minced onion
1 tsp Accent or Beau Monde
Sprinkle of salt

Mix all ingredients and let set for a few hours before serving.

Last but not least........something I get a lot of request for:

Cranberry pinwheels!

I tried these at the Central College Christmas party and had to figure out the recipe. I found similar recipes online and all included Feta cheese which you can choose to do. I haven't tried it that way but my friend Joyce said it was good.

2 tubs of whipped cream cheese (12 oz each)
5+ 10" tortillas
1-2 green onions or scallions
1/2+ cup of dried cranberries or dried cherries
2-3 tbsp sugar

Mix cream cheese with dried cranberries. Chop the tops only of the green onions into 1/4 inch size. Add sugar and onions to cream cheese mixture. Spread mixture generously over tortillas and roll up. Wrap in Saran wrap and let set for a few hours. Remove saran wrap and cut tortillas into 1 inch widths. I cut the ends off that have little mixture on them and throw them in the frig for a snack. Display pinwheels with cream cheese part exposed. These are a winner!
